Bombay potatoes

A simple spicy potato dish.

  • 6 potatoes, boiled and cut into bite sized pieces
  • 2 tbsp sunflower oil
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp chilli powder
  • fresh coriander, washed and roughly chopped

Heat the oil in a pan and fry all the spices for a few minutes. Add the potatoes, making sure they are completely coated in the spices.

Cover the pan and cook for about 10-15 mins. Stir in the coriander and serve.
